Ingredients
- 2 egg whites (at room temperature)
- 1 Tbsp. vanilla
- pinch of salt
- 3/4 c. light brown sugar
- 2 c. pecan halves
Method
- Beat egg whites in small bowl until stiff peaks form. Gradually add sugar, 1 tablespoon at a time, beating well until blended.
- Fold remaining ingredients into meringue.
- Drop by rounded teaspoonfuls onto greased cookie sheet.
- Bake at 250° for 30 minutes.
- Remove from sheet to wire rack to cool.
- Makes 4 dozen.
