Ingredients

  • 1 (9 oz.) can crushed pineapple
  • 1/2 c. sugar
  • 1/2 lb. shortening (part butter)
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 3 eggs, well beaten
  • 1/2 tsp. soda
  • 3 c. sifted flour
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 lb. chopped dates
  • 1 c. coarsely chopped nuts

Method

  • Cook pineapple and 1/2 cup sugar in small, heavy pan, uncovered, until thick, stirring often. Cook 20 minutes or more. Cream shortening and sugar; add flavorings and beaten eggs.
  • Stir the soda into the pineapple and add to creamed mixture with half the sifted dry ingredients.
  • Stir in dates and nuts and then the remaining dry ingredients.
  • Chill for 20 minutes.
  • Drop by spoonfuls on greased and lightly floured baking sheet.
  • Bake at 350°
  • for about 12 minutes.
