- 1 (9 oz.) can crushed pineapple
- 1/2 c. sugar
- 1/2 lb. shortening (part butter)
- 1 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. lemon extract
- 3 eggs, well beaten
- 1/2 tsp. soda
- 3 c. sifted flour
- 3 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 lb. chopped dates
- 1 c. coarsely chopped nuts
Method
- Cook pineapple and 1/2 cup sugar in small, heavy pan, uncovered, until thick, stirring often. Cook 20 minutes or more. Cream shortening and sugar; add flavorings and beaten eggs.
- Stir the soda into the pineapple and add to creamed mixture with half the sifted dry ingredients.
- Stir in dates and nuts and then the remaining dry ingredients.
- Chill for 20 minutes.
- Drop by spoonfuls on greased and lightly floured baking sheet.
- Bake at 350°
- for about 12 minutes.
