Ingredients

  • 10 eggs
  • 1/2 tsp. cream of tartar
  • dash of salt
  • 1 Tbsp. water or lemon juice
  • 1 c. sugar
  • 3/4 c. sifted cake flour

Method

  • Beat egg whites until frothy.
  • Add cream of tartar and beat until stiff.
  • Beat egg yolks and salt until very thick and lemon colored.
  • Add water.
  • Beat in and add sugar, gradually beating until thick enough to hold a stiff peak.
  • Fold egg whites and flour into egg yolk mixture.
  • Pour into ungreased tube pan and bake in oven at 350° about 40 minutes.
  • Invert pan and let cake hang in pan until cool.
  • Makes 1 (9-inch) cake.
