Ingredients

  • 1/2 cups Brown Sugar
  • 1/4 cups Softened Butter
  • 1 whole Egg
  • 1 whole Egg White
  • 3/4 cups Milk
  • 1/4 cups Applesauce
  • 1 teaspoon Vanilla Extract
  • 1 cup All-purpose Flour
  • 1-1/2 cup Oat Bran
  • 1-1/2 teaspoon Baking Powder
  • 3/4 teaspoons Salt (omit If Using Salted Butter)
  • 1 teaspoon Cinnamon
  • 1 whole Apple, Peeled And Chopped

Method

  • Preheat oven to 400°F and place 12 paper muffin cup liners in muffin cups.
  • Combine brown sugar and butter in a medium bowl; beat with a mixer at medium-high speed until light and fluffy, about 5 minutes. Add egg and egg white; beat 1 minute or until well blended. Add milk, applesauce, and vanilla extract; beat on low speed until well blended.
  • Make a well in the center of milk mixture and add flour, oat bran, baking powder, salt, and cinnamon. Stir just until the batter is mixed, then fold in apples.
  • Spoon batter evenly into prepared muffin cups. Sprinkle with extra sugar, if desired. Bake at 400°F for 18 minutes or until muffins spring back when touched lightly in center.
