- 2 graham crackers, crushed
- 1 (4 oz.) pkg. lemon jello flavor (sugar-free)
- 2/3 c. boiling water
- 1 c. Light 'n Lively low-fat cottage cheese
- 1 (8 oz.) pkg. light Philadelphia cream cheese
- 2 c. lite Cool Whip
- 1 c. reduced cherry pie filling
Method
- Spray an 8 or 9-inch pie plate with nonstick cooking spray. Sprinkle crumbs on bottom and sides.
- Dissolve gelatin in boiling water; cool.
- Into blender put gelatin, cottage cheese and softened cream cheese; blend until smooth.
- Pour into large bowl. Gently stir in Cool Whip.
- Pour into crumbs.
- Chill 4 hours, until set.
- Top with cherry filling, if wanted.
