Ingredients

  • 2 graham crackers, crushed
  • 1 (4 oz.) pkg. lemon jello flavor (sugar-free)
  • 2/3 c. boiling water
  • 1 c. Light 'n Lively low-fat cottage cheese
  • 1 (8 oz.) pkg. light Philadelphia cream cheese
  • 2 c. lite Cool Whip
  • 1 c. reduced cherry pie filling

Method

  • Spray an 8 or 9-inch pie plate with nonstick cooking spray. Sprinkle crumbs on bottom and sides.
  • Dissolve gelatin in boiling water; cool.
  • Into blender put gelatin, cottage cheese and softened cream cheese; blend until smooth.
  • Pour into large bowl. Gently stir in Cool Whip.
  • Pour into crumbs.
  • Chill 4 hours, until set.
  • Top with cherry filling, if wanted.
