Ingredients

  • 2 c. rolled oats
  • 1/2 c. pecans
  • 1/2 c. coconut
  • 1 1/2 c. flour
  • 1 Tbsp. packed dark brown sugar
  • 1 tsp. salt
  • 2/3 c. water
  • 1/2 c. corn oil
  • coarse "pretzel" salt

Method

  • Preheat oven to 325°.
  • Place oats in a processor container and process until fine.
  • Add pecans and process again.
  • Add coconut and again process to blend well.
  • Add flour, sugar, salt, water and oil.
  • Process on "pulse" until a dough forms.
  • Divide dough in half.
  • Roll each half onto a 11 x 16-inch jelly roll pan.
  • (A straight sided glass works well as a "rolling pin.")
  • Dough will be thin.
  • Sprinkle with salt.
  • Cut dough into diamonds, squares or strips before baking.
  • Bake about 30 minutes until crisp and browned.
  • Store airtight.
  • Great with dips or spreads or even plain.
