Ingredients
- 1 (30 oz.) can yams, well drained
- 1/3 c. orange juice
- 1 Tbsp. cornstarch
- 1/2 c. brown sugar, firmly packed
- 1/4 c. butter, melted
- 1/2 c. walnuts, coarsely chopped
- 1 1/2 c. miniature marshmallows
Method
- Arrange jams in 1 1/2-quart casserole.
- In medium bowl combine orange juice and cornstarch; stir until cornstarch is completely dissolved.
- Blend in brown sugar and butter.
- Add walnuts and pour over yams.
- Microwave at High (10) for 10 to 12 minutes.
- Arrange marshmallows on top and microwave at High (10) for 1 to 2 minutes. Rotate casserole 1/4 turn after 45 seconds.
- Total Microwave Cooking Time:
- 11 to 14 minutes.
- Makes 4 servings.
