Ingredients

  • 1 (30 oz.) can yams, well drained
  • 1/3 c. orange juice
  • 1 Tbsp. cornstarch
  • 1/2 c. brown sugar, firmly packed
  • 1/4 c. butter, melted
  • 1/2 c. walnuts, coarsely chopped
  • 1 1/2 c. miniature marshmallows

Method

  • Arrange jams in 1 1/2-quart casserole.
  • In medium bowl combine orange juice and cornstarch; stir until cornstarch is completely dissolved.
  • Blend in brown sugar and butter.
  • Add walnuts and pour over yams.
  • Microwave at High (10) for 10 to 12 minutes.
  • Arrange marshmallows on top and microwave at High (10) for 1 to 2 minutes. Rotate casserole 1/4 turn after 45 seconds.
  • Total Microwave Cooking Time:
  • 11 to 14 minutes.
  • Makes 4 servings.
