Ingredients

  • 2 c. self-rising flour
  • 2 c. sugar
  • 3 eggs
  • 1/2 c. olive oil
  • 1 c. cooked, mashed prunes or 1 - 8 oz. jar baby food prunes
  • 1/4 tsp. walnut flavoring or vanilla flavoring
  • 2 to 3 tbsp. flour
  • 4 oz. walnuts

Method

  • Sift together self-rising flour and sugar into a bowl.
  • In another bowl stir together eggs, olive oil, prunes and flavoring. Use the 2 to 3 tbsp. of flour to dust walnuts (4 oz. of raisins may also be used) mix into a batter; then pour in flour mixture. Grease and dust a tube pan and pour in cake batter.
  • Bake 1 hour at 350°.
