Ingredients
- 4 Tbsp. butter
- 2 c. sugar
- 4 eggs
- 1 c. chopped dates
- 4 c. rice
- 1 c. chopped walnuts
- 2 tsp. vanilla
- 4 oz. shredded coconut
Method
- Melt butter in large saucepan.
- Remove and stir in sugar, eggs, and dates.
- Cook over low heat stirring until mixture leaves side of pan (about 20 minutes).
- Remove from heat.
- Add all else but coconut; cool.
- Shape in rolls and roll in coconut; refrigerate.
