Ingredients

  • 3 None egg whites
  • 1/2 cup sugar
  • 1/2 tsp white vinegar
  • 5 oz (about 6) dates, pitted and chopped
  • 4 oz semi-sweet chocolate, chopped
  • 1/2 cup heavy cream, whipped

Method

  • Preheat the oven to 300°F. Draw twenty four 2 3/4-inch circles on two sheets of parchment paper, using a small glass as a guide. Spray 2 baking pans with no stick cooking spray and place paper, pencil side down, onto pans.
  • Beat egg whites in a large bowl with electric mixer until firm peaks form. Add sugar, 1 tbsp at a time, beating until thick and glossy. Beat in vinegar. Gently fold in dates and chocolate.
  • Divide meringue among circles on prepared pans. Using a spatula, smooth into rounds.
  • Bake for 30 mins (if you prefer a crisper meringue, cook for another 10 mins). Cool meringues completely in turned off oven with door ajar. Sandwich meringues together with whipped cream to serve.
