- 1 cup Refined Coconut Oil, Melted
- 2 whole Large Eggs
- 1 teaspoon Vanilla Extract
- 3/4 cups White Sugar
- 3/4 cups Brown Sugar
- 1 teaspoon Salt
- 2-1/4 cups Unbleached All-purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 cups Dark Chocolate Chips
- 1/4 cups Unsweetened Cocoa
- 1 cup Shredded Coconut
- 36 sticks Pretzel Sticks
Method
- Preheat oven to 350°F. Prepare baking sheets with Silpat or parchment paper.
- In a stand mixer bowl or in a separate bowl (if using a handheld mixer), combine all wet ingredients (coconut oil, eggs, vanilla, sugars) and blend.
- In a separate bowl, combine all dry ingredients (flour, baking powder, baking soda, chocolate chips, cocoa, shredded coconut). Once combined, add to wet ingredients while mixing to combine.
- Spoon cookie onto prepared baking sheets using a cookie scoop or small spoon. Slightly flatten and add 1/2 pretzel stick to each cookie.
- Bake 9 minutes. Makes 6 dozen cookies.
