Ingredients

  • 1 cup Refined Coconut Oil, Melted
  • 2 whole Large Eggs
  • 1 teaspoon Vanilla Extract
  • 3/4 cups White Sugar
  • 3/4 cups Brown Sugar
  • 1 teaspoon Salt
  • 2-1/4 cups Unbleached All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 cups Dark Chocolate Chips
  • 1/4 cups Unsweetened Cocoa
  • 1 cup Shredded Coconut
  • 36 sticks Pretzel Sticks

Method

  • Preheat oven to 350°F. Prepare baking sheets with Silpat or parchment paper.
  • In a stand mixer bowl or in a separate bowl (if using a handheld mixer), combine all wet ingredients (coconut oil, eggs, vanilla, sugars) and blend.
  • In a separate bowl, combine all dry ingredients (flour, baking powder, baking soda, chocolate chips, cocoa, shredded coconut). Once combined, add to wet ingredients while mixing to combine.
  • Spoon cookie onto prepared baking sheets using a cookie scoop or small spoon. Slightly flatten and add 1/2 pretzel stick to each cookie.
  • Bake 9 minutes. Makes 6 dozen cookies.
