Ingredients
- 1/2 c. vegetable oil
- 2 c. onions, minced
- 2 tbsp. chopped garlic
- 2 c. whole tomatoes
- 1 tbsp. paprika
- 1/4 teaspoon cayenne
- 1 teaspoon salt
- 1 teaspoon white pepper
- 1 tbsp. cornstarch
- 2 lbs. med. shrimp, peeled & deveined
- 1 bay leaf
Method
- Heat vegetable oil and saute/fry the first 4 ingredients just till tender.
- Add in tomatoes, cook 1 minute more.
- Stir in paprika, cayenne, salt, pepper, water, bay leaf.
- Simmer for 15 min.
- Add in shrimp, continue for an additional 10 min.
- Thicken with cornstarch mixed with 3 Tbsp.
- cool water.
- Serve with steamed white rice.
- Serves 8 to 10.
