Ingredients

  • 1/2 c. vegetable oil
  • 2 c. onions, minced
  • 2 tbsp. chopped garlic
  • 2 c. whole tomatoes
  • 1 tbsp. paprika
  • 1/4 teaspoon cayenne
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 tbsp. cornstarch
  • 2 lbs. med. shrimp, peeled & deveined
  • 1 bay leaf

Method

  • Heat vegetable oil and saute/fry the first 4 ingredients just till tender.
  • Add in tomatoes, cook 1 minute more.
  • Stir in paprika, cayenne, salt, pepper, water, bay leaf.
  • Simmer for 15 min.
  • Add in shrimp, continue for an additional 10 min.
  • Thicken with cornstarch mixed with 3 Tbsp.
  • cool water.
  • Serve with steamed white rice.
  • Serves 8 to 10.
