Ingredients

  • butter for pan
  • 3 med juicy sweet apples such as gala or Fuji
  • 1/2 c flour
  • 1 t baking powser
  • 2 eggs
  • 1/3 c granulated sugar
  • pinch of salt
  • 2 t vanilla extract
  • 2TB unsalted butter, melted and cool but still liquid
  • confectioners sugar (for sprinkling)
  • 6 TB whole milk

Method

  • 1. Set oven at 400
  • butter an 8 inch square baking pan and line bottom with parchment
  • 2. peel apples, slice them thinly
  • 3.in bowl, whisk the flour and baking powder to blend
  • 4. in large bowl, whisk eggs, granulated sugar and salt for 2 minutes. Whisk in vanilla, then the milk and melted butter. Add the flour and whisk until the batter is smooth. Gently fold in apples until each apple is coated with batter.
  • 5. scrape the batter into pan
  • 6. bake cake for 40-50 minutes or until is golden and uniformly puffed. Cut into squares and dust with sugar
