Ingredients

  • 1 lb. ground beef (or leftover beef, pork roast or chicken, cut bite-size)
  • 1 Tbsp. oil
  • 2 large potatoes, diced
  • 1 carrot, diced small
  • 6 c. water
  • 1 c. flour
  • 1 Tbsp. curry powder
  • 1 1/4 c. water
  • 3 tsp. salt
  • 1 onion (sliced thin from top to bottom)

Method

  • Brown ground beef in oil.
  • Add diced potatoes and carrot.
  • When potatoes start to change color slightly, add 6 cups water; bring to boil; reduce heat and simmer until potatoes are tender (about 10 minutes).
  • While potatoes are cooking, beat until smooth flour, curry powder and 1 1/4 cups water.
  • When potatoes are tender, add salt, thinly sliced onion and curry mixture, stirring until smooth. Serve over hot white rice.
  • Makes 6 servings.
