Ingredients
- 1 lb. ground beef (or leftover beef, pork roast or chicken, cut bite-size)
- 1 Tbsp. oil
- 2 large potatoes, diced
- 1 carrot, diced small
- 6 c. water
- 1 c. flour
- 1 Tbsp. curry powder
- 1 1/4 c. water
- 3 tsp. salt
- 1 onion (sliced thin from top to bottom)
Method
- Brown ground beef in oil.
- Add diced potatoes and carrot.
- When potatoes start to change color slightly, add 6 cups water; bring to boil; reduce heat and simmer until potatoes are tender (about 10 minutes).
- While potatoes are cooking, beat until smooth flour, curry powder and 1 1/4 cups water.
- When potatoes are tender, add salt, thinly sliced onion and curry mixture, stirring until smooth. Serve over hot white rice.
- Makes 6 servings.
