Ingredients
- 2 slices granary bread or wholemeal
- 3/8 ounce Flora Light spread
- 2 dried apricots no-need to soak, chopped
- 1 teaspoon light mayonnaise Hellman's
- 1 teaspoon mango chutney
- mild curry paste to taste
- 2 1/4 tablespoons cooked chicken diced
- lettuce leaves
Method
- Spread the bread slices with Flora Light spread.
- In a small bowl mix together the apricots, mayonnaise, mango chutney and curry paste, and stir in the chicken pieces.
- Top one slice of bread with the chicken mixture.
- Cover with the lettuce leaves and top with the remaining slice of bread and serve.
