Ingredients

  • 2 slices granary bread or wholemeal
  • 3/8 ounce Flora Light spread
  • 2 dried apricots no-need to soak, chopped
  • 1 teaspoon light mayonnaise Hellman's
  • 1 teaspoon mango chutney
  • mild curry paste to taste
  • 2 1/4 tablespoons cooked chicken diced
  • lettuce leaves

Method

  • Spread the bread slices with Flora Light spread.
  • In a small bowl mix together the apricots, mayonnaise, mango chutney and curry paste, and stir in the chicken pieces.
  • Top one slice of bread with the chicken mixture.
  • Cover with the lettuce leaves and top with the remaining slice of bread and serve.
