Ingredients

  • 1 cup Sugar
  • 2 cups Water
  • 1 bunch Mint
  • 3 whole Cucumbers
  • 1/4 cups Lime Juice
  • 1/4 teaspoons Guar Gum

Method

  • In a pot, add sugar, water and 3/4 bunch of mint leaves. Gently boil until sugar dissolves, about 4 minutes. Leave to steep another 5 minutes; strain and cool.
  • Peel, seed and rough chop cucumber. Place in blender with a little water and puree; strain through fine mesh sieve lined with cheesecloth.
  • Combine with cooled simple syrup, lime juice and guar gum. Process in ice cream machine.
  • Freeze overnight. ENJOY!
