Ingredients
- 1 cup Sugar
- 2 cups Water
- 1 bunch Mint
- 3 whole Cucumbers
- 1/4 cups Lime Juice
- 1/4 teaspoons Guar Gum
Method
- In a pot, add sugar, water and 3/4 bunch of mint leaves. Gently boil until sugar dissolves, about 4 minutes. Leave to steep another 5 minutes; strain and cool.
- Peel, seed and rough chop cucumber. Place in blender with a little water and puree; strain through fine mesh sieve lined with cheesecloth.
- Combine with cooled simple syrup, lime juice and guar gum. Process in ice cream machine.
- Freeze overnight. ENJOY!
