Ingredients
- 1 large cucumber, thinly sliced
- 1 small onion, thinly sliced
- 1 c. cider vinegar
- 1 Tbsp. sugar
- salt and freshly ground pepper to taste
Method
- Place the sliced cucumber and onion in a bowl and sprinkle with the salt, pepper and sugar.
- Allow to sit for a few minutes. Pour the vinegar over the cucumber and onion.
- Place several ice cubes on the cucumbers to crisp them.
- Refrigerate for 1 hour. Remove the ice cubes and serve.
