Ingredients

  • 10 medium cucumbers, washed (good and free of spots)
  • 8 c. sugar
  • 5 Tbsp. salt
  • 4 c. vinegar
  • 2 Tbsp. pickling spices (optional)

Method

  • Put cucumbers in stone jar.
  • Cover with boiling water and let stand until next morning.
  • Drain well.
  • Cover with boiling water. Repeat for 3 days.
  • On the fifth day, drain and dry well the cucumbers.
  • Slice in 1/2-inch pieces.
  • Combine sugar, salt and vinegar.
  • Add spices if desired (I don't use spices).
  • Bring to a boil and pour over cucumbers.
  • Let stand 2 days.
  • On third day, bring to a boil. Can and seal.
  • Boiling water bath is recommended. These are very good and brickel. If you have any left over, they do not turn soft.
