Ingredients
- 1/2 c. Bisquick reduced fat baking mix
- 2 c. canned pumpkin
- 1 1/2 c. evaporated milk
- 2 Tbsp. brown Sugar Twin
- 3 tsp. pumpkin pie spice
- 1 (4 serving size) pkg. sugar-free instant vanilla pudding mix
- 2 eggs or equivalent egg substitute
Method
- Preheat oven to 350°.
- Spray 9-inch pie pan with cooking spray.
- In a large bowl, combine baking mix and dry pudding mix. Add pumpkin, milk, eggs, brown Sugar Twin and pumpkin pie spice. Using an electric mixer, blend for two minutes.
- Pour into sprayed pie pan.
- Bake for 50 minutes or until center is puffed up.
