Ingredients

  • 1/2 c. Bisquick reduced fat baking mix
  • 2 c. canned pumpkin
  • 1 1/2 c. evaporated milk
  • 2 Tbsp. brown Sugar Twin
  • 3 tsp. pumpkin pie spice
  • 1 (4 serving size) pkg. sugar-free instant vanilla pudding mix
  • 2 eggs or equivalent egg substitute

Method

  • Preheat oven to 350°.
  • Spray 9-inch pie pan with cooking spray.
  • In a large bowl, combine baking mix and dry pudding mix. Add pumpkin, milk, eggs, brown Sugar Twin and pumpkin pie spice. Using an electric mixer, blend for two minutes.
  • Pour into sprayed pie pan.
  • Bake for 50 minutes or until center is puffed up.
