Ingredients

  • 1 small can tuna
  • 4 1/2 Tbsp. chopped sweet pickle or dill pickle
  • 1 1/2 Tbsp. minced onion (or use relish)
  • 1 c. mayonnaise
  • 1 1/2 Tbsp. lemon juice
  • 1 1/2 to 2 c. crisp shredded cabbage
  • 1 small bag potato chips, coarsely crushed
  • lettuce
  • tomato wedges

Method

  • Combine tuna, pickle, onion, mayonnaise and lemon juice and chill.
  • When ready to serve, add cabbage and toss together.
  • Add part of crushed potato chips and toss.
  • Heat in lettuce lined bowl.
  • Sprinkle remaining chips on top and garnish with tomato wedge.
  • Serves 6.
