Ingredients
- 1 gal. potatoes (about 16 large), cooked, peeled and sliced
- 10 hard-cooked eggs
- 1 c. chopped onion
- 2 c. mayonnaise
- 1 c. light cream
- 1/3 c. vinegar
- 1/3 c. sugar
- 3 Tbsp. mustard
- 1/2 tsp. salt
Method
- Place potatoes in large salad bowl.
- Separate eggs.
- Chop whites and add to potatoes with onion.
- Toss gently.
- In another bowl, mash yolks with mayonnaise, cream, vinegar, sugar, mustard and salt.
- Pour over potatoes and stir to coat.
- Cover and chill. Yields 16 to 20 servings.
