Ingredients

  • 1 gal. potatoes (about 16 large), cooked, peeled and sliced
  • 10 hard-cooked eggs
  • 1 c. chopped onion
  • 2 c. mayonnaise
  • 1 c. light cream
  • 1/3 c. vinegar
  • 1/3 c. sugar
  • 3 Tbsp. mustard
  • 1/2 tsp. salt

Method

  • Place potatoes in large salad bowl.
  • Separate eggs.
  • Chop whites and add to potatoes with onion.
  • Toss gently.
  • In another bowl, mash yolks with mayonnaise, cream, vinegar, sugar, mustard and salt.
  • Pour over potatoes and stir to coat.
  • Cover and chill. Yields 16 to 20 servings.
