Ingredients

  • 3 eggs
  • 1 tablespoon milk
  • 1 1/2 tablespoons butter, softened
  • 4 slices good-quality white bread
  • 1 teaspoon Dijon mustard
  • 4 slices Gruyère cheese
  • 2 slices leg ham
  • 2 teaspoons vegetable oil

Method

1. Crack 1 egg into a wide, shallow bowl, add the milk and lightly beat. Season with salt and freshly ground black pepper.

2. Butter the bread using 1/2 tablespoon of the butter and spread half the slices with Dijon mustard. Place a slice of cheese on top, then the ham and then another slice of cheese. Top with the remaining bread.

3. Heat the remaining butter and vegetable oil in a large non-stick frying pan over medium heat. While the butter is melting, dip one sandwich into the egg and milk mixture, coating the bread on both sides. When the butter is sizzling but not brown, add the sandwich and cook for 1 1/2 minutes on one side, pressing down firmly with a spatula. Turn over and cook the other side, then move it to the side of the pan.

4. Gently break an egg into the pan and fry until it is done to your liking. Transfer the sandwich to a plate and top with the fried egg. Keep warm while you repeat with the remaining sandwich and egg, adding more butter and oil to the pan if necessary. Serve immediately.
