Ingredients

  • 10 oz frozen puff pastry
  • 1/3 cup diced uncooked ham
  • 1/2 cup grated Cheddar cheese
  • 1/8 cup fresh grated Parmesan cheese
  • 1 egg yolk
  • salt
  • pepper
  • nutmeg
  • 1 egg yolk for glazing
  • sesame seeds

Method

  • preheat the oven to 425 degrees. Mix the ham, cheeses, and egg yolk together and season to taste. Roll out the puff pastry to 12 x 18 inches. Halve this lengthwise and cut into triangles with a 3 inch base. Make a 1 inch cut in the center of the base. Divide the filling evenly among the triangles and proceed as follows.
  • Paint the apex of the triangles with egg yolk, avoiding the cut edges. pull open th ecut base a little, place over the filling, and fold over once. Fold the point over the cut edge and press tightly against eh underside. Brush the surface with egg yolk, sprinkle with sesame seeds and bake for 12-15 minutes.
