Ingredients
- 1 1/2 pound(s) uncooked boneless, skinless chicken breast
- 15 3/4 oz canned black beans, drained and rinsed
- 15 3/4 oz canned yellow corn, drained
- 3 cup(s) Pace Thick & Chunky Salsa
- 1 cup(s) fat-free chicken broth
- 2 tbsp taco seasoning mix
- 1 medium onion, chopped
- 1 cup fat free sour cream
- 1 cup fat free cheddar cheese
Method
- Put everything but the sour cream and cheese in the crock pot.
- Cook on LOW for 6-8 hours.
- Turn Crockpot OFF or to WARM and stir in cheese and sour cream. Garnish with scallions (optional).
- Serve over brown rice, or put in a tortilla, or add additional chicken broth (when finished) and serve as soup! Its also great over baked Tostitos like nachos.
