Ingredients

  • 1 1/2 pound(s) uncooked boneless, skinless chicken breast
  • 15 3/4 oz canned black beans, drained and rinsed
  • 15 3/4 oz canned yellow corn, drained
  • 3 cup(s) Pace Thick & Chunky Salsa
  • 1 cup(s) fat-free chicken broth
  • 2 tbsp taco seasoning mix
  • 1 medium onion, chopped
  • 1 cup fat free sour cream
  • 1 cup fat free cheddar cheese

Method

  • Put everything but the sour cream and cheese in the crock pot.
  • Cook on LOW for 6-8 hours.
  • Turn Crockpot OFF or to WARM and stir in cheese and sour cream. Garnish with scallions (optional).
  • Serve over brown rice, or put in a tortilla, or add additional chicken broth (when finished) and serve as soup! Its also great over baked Tostitos like nachos.
