Ingredients
- 2 tablespoons butter
- 1 large onion
- 1 lb small okra pods, caps trimmed
- 1 tablespoon water
- 2 firm tomatoes, cut into wedges
- 1 teaspoon brown sugar
- 12 teaspoon salt
- 12 teaspoon pepper
Method
- In a large skillet, heat butter and saute onion and okra.
- Cook about 5 minutes.
- Add 1 to 2 tablespoons water if mixture is dry or sticky.
- Add tomatoes, sugar, salt and pepper.
- Stir to combine.
- Cover and cook over low heat just until tomatoes are heated through, about 1 minute.
