Ingredients

  • 1 c. chicken stock or consomme
  • 1 c. instant rice
  • 1/2 c. mayonnaise
  • 2 c. diced, cooked turkey or chicken
  • 2 hard-boiled eggs
  • 1 c. grated Cheddar cheese
  • 1/2 c. grated onion
  • 1 can cream of chicken soup
  • 3 Tbsp. Worcestershire sauce
  • 1 c. cracker crumbs

Method

  • Cook rice in chicken stock or consomme.
  • Do not drain rice. Add mayonnaise, turkey or chicken, eggs, cheese, onion, soup and Worcestershire sauce.
  • Place in large, buttered casserole. Sprinkle with cracker crumbs and bake at 350° for 30 minutes.
