- 1 c. chicken stock or consomme
- 1 c. instant rice
- 1/2 c. mayonnaise
- 2 c. diced, cooked turkey or chicken
- 2 hard-boiled eggs
- 1 c. grated Cheddar cheese
- 1/2 c. grated onion
- 1 can cream of chicken soup
- 3 Tbsp. Worcestershire sauce
- 1 c. cracker crumbs
Method
- Cook rice in chicken stock or consomme.
- Do not drain rice. Add mayonnaise, turkey or chicken, eggs, cheese, onion, soup and Worcestershire sauce.
- Place in large, buttered casserole. Sprinkle with cracker crumbs and bake at 350° for 30 minutes.
