Ingredients
- 3 Tbsp. margarine
- 3 Tbsp. all-purpose flour
- 2 c. milk
- 1/2 tsp. mustard
- 1/8 tsp. black pepper
- 1 c. diced, cooked ham
- 4 boiled eggs, quartered
- 4 slices bread or buns, toasted
Method
- Melt margarine in a heavy saucepan over low heat.
- Add flour, stirring until smooth.
- Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
- Stir in mustard and pepper.
- Add ham and eggs.
- Stir gently.
- Place toast on individual serving plates. Spoon ham mixture over toast.
- Makes 4 servings.
