Ingredients

  • 3 Tbsp. margarine
  • 3 Tbsp. all-purpose flour
  • 2 c. milk
  • 1/2 tsp. mustard
  • 1/8 tsp. black pepper
  • 1 c. diced, cooked ham
  • 4 boiled eggs, quartered
  • 4 slices bread or buns, toasted

Method

  • Melt margarine in a heavy saucepan over low heat.
  • Add flour, stirring until smooth.
  • Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  • Stir in mustard and pepper.
  • Add ham and eggs.
  • Stir gently.
  • Place toast on individual serving plates. Spoon ham mixture over toast.
  • Makes 4 servings.
