Ingredients

  • 4 oz. bacon, diced
  • 1 green pepper, chopped
  • 2 1/2 c. chicken broth
  • 1 (15 oz.) can creamed corn
  • 1 tsp. paprika
  • salt to taste
  • 1 c. onion
  • 2 Tbsp. bacon dripping
  • 2 c. potatoes, diced
  • 1 tsp. paprika
  • 1/2 tsp. pepper
  • 2 c. milk or condensed milk

Method

  • Brown bacon in Dutch oven and drain, reserving 2 tablespoons of drippings.
  • Saute onion and green pepper in drippings until soft. Add chicken broth and diced potatoes.
  • Bring to a boil and simmer until potatoes are cooked.
  • Add creamed corn, seasonings, bacon and milk.
  • Heat through.
