Ingredients

  • 1 pound fresh spinich
  • 3T unsalted butter
  • 1/2 cup heavy cream
  • 1/4 grated nutmeg
  • 1/2t fresh ground black pepper
  • 1 cup onion (chopped fine)
  • 1T flour
  • 2 medium cloves garlic (minced)
  • 1/2 cup bread crumbs

Method

  • Clean spinich thoroughly; simmer in 1/4 cup boiling water until extremely tender (approx. 10 minutes).
  • Drain spinich completely and allow to cool; chop to desired level.
  • Melt 2T butter in large saute pan; add onion and garlic until slightly brown.
  • Slowly stir in heavy cream, flour, and nutmet.
  • Melt remaining butter slowly in small saute pan; mix in bread crumbs.
  • When mixture is smooth and hot, add in spinich; toss over medium-low heat (approx. 3-5 minutes).
  • Sprinkly bread crumb mixture over spinich mixture; serve immediately.
