Ingredients

  • 1/2 c. butter
  • 1 c. boiling water
  • 1 c. flour
  • 1/2 tsp. flour
  • 4 eggs

Method

  • Melt butter in boiling water.
  • Add the flour and salt, stirring vigorously.
  • Cook, continuing to stir, until the mixture forms a ball that doesn't separate when handled.
  • Remove mixture from heat and cool slightly.
  • Add eggs, one at a time, beating thoroughly after each addition.
  • Beat until mixture is smooth and free from all lumps.
  • Drop from tablespoon onto greased baking sheet, 2-inches apart.
  • Bake in hot oven (450°) for 15 minutes, then at 325° for 25 minutes.
  • Remove puffs from baking sheet, cool and fill with pudding.
  • Cut hole in side or top.
  • Can top with chocolate.
  • Makes 12.
