Ingredients
- 6 c. sliced potatoes
- 1/2 c. sliced carrots
- 6 slices bacon
- 1 c. sliced celery
- 4 c. skim milk
- 1 onion, chopped
Method
- Cook the potatoes and carrots in boiling water until tender. Drain. Saute bacon until crisp. Drain on paper towels and crumble. Saute onion and celery until tender.
- Combine potatoes, carrots, onion/celery mixture, bacon and milk in pot. Simmer for 30 minutes.
- May also add cheese as desired.
- Makes about 2 quarts or 8 (1 cup) servings.
