Ingredients
- 1 whole hen
- 3 carrots
- 2 onions
- 1 whole leek
- 1 rib celery
- 2 cloves garlic
- 6 mushrooms
- 1 lemon
- thyme to taste
- bay leaf to taste
- salt to taste
- 2 Tbsp. flour
- 1 stick butter
- 1 1/2 pt. heavy cream
Method
- Cut the hen.
- Peel, wash and cut the vegetables.
- Saute slightly the vegetables and the hen.
- Add the flour and pour water to cover.
- Add the spices.
- Let cook.
- Strain through a China cap (small hole strainer).
- Add cream and butter to sauce.
- Season to taste.
- Garnish:
- Julienne strips of hen and mushrooms that have been sauteed slightly in butter.
