Ingredients

  • 1 whole hen
  • 3 carrots
  • 2 onions
  • 1 whole leek
  • 1 rib celery
  • 2 cloves garlic
  • 6 mushrooms
  • 1 lemon
  • thyme to taste
  • bay leaf to taste
  • salt to taste
  • 2 Tbsp. flour
  • 1 stick butter
  • 1 1/2 pt. heavy cream

Method

  • Cut the hen.
  • Peel, wash and cut the vegetables.
  • Saute slightly the vegetables and the hen.
  • Add the flour and pour water to cover.
  • Add the spices.
  • Let cook.
  • Strain through a China cap (small hole strainer).
  • Add cream and butter to sauce.
  • Season to taste.
  • Garnish:
  • Julienne strips of hen and mushrooms that have been sauteed slightly in butter.
