Ingredients

  • 1 lb. crawfish tails
  • 1 to 1 1/2 sticks butter or oleo
  • 1/2 Tbsp. flour
  • 1 medium onion, chopped fine
  • 1 Tbsp. bell pepper, chopped fine
  • green onion tops, chopped
  • 2 Tbsp. parsley, chopped
  • salt and pepper to taste
  • 2 or 3 garlic pods, chopped fine

Method

  • Melt butter or oleo in a skillet. Add flour and stir until blended. Add onions, bell pepper and garlic pods. Cook for 10 minutes. Cover and cook for another 15 to 20 minutes on low heat, stirring occasionally. Add salt, pepper and cayenne to taste, green onions and parsley and simmer a while, covered, until seasonings blend. Serve over rice.
