Ingredients

  • 1 egg
  • grated peel of one orange
  • 2/3 c orange juice
  • 1/4 c oil
  • 2 c flour
  • 3/4 c sugar
  • 2 t baking powder
  • 1/2 t salt
  • 1 c coarsely chopped cranberries
  • 1/4 c chopped pecans
  • 2 t sugar

Method

  • Preheat oven to 400 F. Spray 12 count muffin pan with Pam. In large bowl, blend egg, orange peel, juice and oil; stir in flour, sugar, baking powder and salt until moistened. Stir in cranberries and pecans. Spoon into muffin cups. Sprinkle tops with 2 t sugar. Bake 15-20 minutes or until lightly browned. Cool 2 minutes and remove from pan.
