Ingredients

  • 4 c. sifted flour
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 c. sugar
  • 2 eggs, beaten
  • 4 Tbsp. shortening
  • 1 c. chopped pecans
  • 2 tsp. orange rinds or bits
  • 1 1/2 c. orange juice
  • 2 c. halved raw cranberries

Method

  • Sift dry ingredients together.
  • Add shortening, orange rind, orange juice and eggs.
  • Mix thoroughly.
  • Fold in cranberries and pecans.
  • Pour in greased loaf pans.
  • Bake at 350° for 1 hour. Makes 2 large or 5 small loaves.
