Ingredients
- 2 grilled chicken breasts, sliced
- 200g/7oz fresh cranberries
- 150g/5oz walnuts, roughly chopped
- 1 small Iceberg lettuce, roughly chopped
- 1 Romaine lettuce, roughly chopped
- For the dressing:
- 3tbsp olive oil
- 1tbsp lemon juice
- 1tbsp pure honey
- salt
Method
- Preparation:
- 1.In a bowl, mix the Iceberg and Romaine lettuce. Add the cranberries and walnuts and mix well.
- 2.To prepare the dressing, in a separate bowl, whisk the dressing ingredients and pour over the salad.
- 3.Arrange the grilled chicken slices and decorate with some fresh herbs (whatever you have available at home, I used fresh mint leaves) and serve!
