Ingredients

  • 1 c. fresh cranberries
  • 1 1/4 c. sugar
  • 3 c. flour
  • 4 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 3 Tbsp. melted butter
  • 2 eggs, slightly beaten
  • 3 Tbsp. grated orange rind
  • 1/2 c. chopped nuts

Method

  • Grind cranberries coarsely.
  • Add this to 1/4 cup sugar; set aside.
  • Sift together 1 cup sugar, flour, baking powder and salt. Blend in milk, melted butter, eggs, orange rind and nuts.
  • Fold in cranberry mixture.
  • Pour into greased loaf pan.
  • Cook at 350° for 1 hour.
