Ingredients

  • 2 c. fresh cranberries
  • 1 large banana, diced
  • 1 c. + 1/2 c. sugar, divided
  • 2 c. vanilla water crumbs
  • 1/2 c. butter
  • 6 Tbsp. butter
  • 2 eggs
  • 1/2 c. chopped nuts
  • 1 c. whipping cream

Method

  • Grind cranberries.
  • Combine with banana and 1/2 c. sugar.
  • Set aside.
  • Combine vanilla wafer crumbs with 6 Tbsp. butter, melted. Press 1/2 crumbs in bottom of 9-inch pie dish.
  • Cream 1/2 c. butter and 1 c. sugar until light.
  • Add eggs and beat until fluffy.
  • Fold in nuts.
  • Spread over crumb mixture.
  • Top with cranberry mixture. Whip cream and spread over cranberries.
  • Sprinkle with remaining crumbs.
  • Chill 6 hours or overnight.
