Ingredients
- 2 c. fresh cranberries
- 1 large banana, diced
- 1 c. + 1/2 c. sugar, divided
- 2 c. vanilla water crumbs
- 1/2 c. butter
- 6 Tbsp. butter
- 2 eggs
- 1/2 c. chopped nuts
- 1 c. whipping cream
Method
- Grind cranberries.
- Combine with banana and 1/2 c. sugar.
- Set aside.
- Combine vanilla wafer crumbs with 6 Tbsp. butter, melted. Press 1/2 crumbs in bottom of 9-inch pie dish.
- Cream 1/2 c. butter and 1 c. sugar until light.
- Add eggs and beat until fluffy.
- Fold in nuts.
- Spread over crumb mixture.
- Top with cranberry mixture. Whip cream and spread over cranberries.
- Sprinkle with remaining crumbs.
- Chill 6 hours or overnight.
