Ingredients

  • 1 1/2 c. sifted flour
  • 1/3 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 ripe banana, mashed (1/2 c.)
  • 1/2 c. milk
  • 1 beaten egg
  • 1/4 c. melted shortening
  • 1 (8 oz.) can jellied cranberry sauce, cut into slices
  • pecan halves

Method

  • Combine dry ingredients.
  • Combine banana, milk, egg and shortening.
  • Add to flour mixture; stir to blend.
  • Pour into greased 9 x 9-inch baking pan.
  • Arrange cranberry slices on top and then pecan halves.
  • Sprinkle a little sugar over the top and bake at 400° for 25 to 30 minutes.
