Ingredients

  • 4 strips Bacon
  • 2 Flour Tortillas
  • 4 Large Eggs
  • 8 Chives For Garnish
  • Paprika, For Garnish
  • Salt And Pepper, to taste

Method

  • Heat oven to 400F (200C).
  • Cook bacon strips in a hot pan (no buter or oil required), Do not overcook the bacon as it will cook in the oven as well. Drain bacon strips after.
  • Halve the flour tortillas. Fold halved tortillas in a muffin tin, so they start to look like small torilla cups. Put a bacon strip into each of the tortilla cups and add an egg inside, on top of the bacon strip.
  • Cook tortilla cups in the oven for 20 minutes. If you like your eggs runny, check after about 15 minutes.
  • Take tortilla cups out of the oven. Cut chives in small pieces. Sprinke chives on top of the tortilla cups. Add some paprika powder, salt and pepper to taste.
