Ingredients
- 1 c. chopped pecans
- 16 saltine crackers, crushed
- 3 egg whites
- dash of salt
- 1 tsp. vanilla
- 1/2 c. Karo syrup
- 3/4 c. sugar
- grated coconut
- 8 oz. Cool Whip
Method
- Mix chopped pecans and crushed crackers in large bowl and set aside.
- In small mixing bowl, beat egg whites, salt, vanilla and Karo syrup until stiff.
- Add sugar.
- Fold mixture in with pecans and crushed crackers.
- Bake in 9-inch greased pie pan at 325° for 25 to 30 minutes until golden.
- It will sink as it cools.
- Let cool completely, then top with Cool Whip and grated coconut. Refrigerate.

- 1 pie.
