Ingredients

  • 1 c. chopped pecans
  • 16 saltine crackers, crushed
  • 3 egg whites
  • dash of salt
  • 1 tsp. vanilla
  • 1/2 c. Karo syrup
  • 3/4 c. sugar
  • grated coconut
  • 8 oz. Cool Whip

Method

  • Mix chopped pecans and crushed crackers in large bowl and set aside.
  • In small mixing bowl, beat egg whites, salt, vanilla and Karo syrup until stiff.
  • Add sugar.
  • Fold mixture in with pecans and crushed crackers.
  • Bake in 9-inch greased pie pan at 325° for 25 to 30 minutes until golden.
  • It will sink as it cools.
  • Let cool completely, then top with Cool Whip and grated coconut. Refrigerate.
