- 6 to 7 oz. crab meat
- 1 c. shredded Cheddar cheese
- 1/2 c. chopped celery
- 1/4 c. chopped parsley
- 1/2 c. mayonnaise
- 1 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 1/8 tsp. Tabasco
- 4 English muffins
- 1/4 c. butter
- 8 Cheddar cheese slices
Method
- Combine crab meat, shredded cheese, celery and parsley. Combine mayonnaise, lemon juice, mustard and Tabasco sauce.
- Toss crab meat mixture with dressing.
- Split and toast muffins and spread with butter.
- Spread crab meat mixture and 1 slice of cheese on each muffin.
- Broil about 4 inches from heat for 4 to 5 minutes, until cheese is melted and crab mixture is heated.
- Cut in squares.
