Ingredients

  • 6 to 7 oz. crab meat
  • 1 c. shredded Cheddar cheese
  • 1/2 c. chopped celery
  • 1/4 c. chopped parsley
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1/8 tsp. Tabasco
  • 4 English muffins
  • 1/4 c. butter
  • 8 Cheddar cheese slices

Method

  • Combine crab meat, shredded cheese, celery and parsley. Combine mayonnaise, lemon juice, mustard and Tabasco sauce.
  • Toss crab meat mixture with dressing.
  • Split and toast muffins and spread with butter.
  • Spread crab meat mixture and 1 slice of cheese on each muffin.
  • Broil about 4 inches from heat for 4 to 5 minutes, until cheese is melted and crab mixture is heated.
  • Cut in squares.
