Ingredients

  • 1/4 c. butter
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • dash of pepper
  • 1 Tbsp. minced parsley
  • 1 Tbsp. chopped chives or green onion tops
  • 1 c. milk
  • 1 tsp. grated lemon peel
  • 2 Tbsp. fresh lemon juice
  • 1 (3 to 4 oz.) sliced mushrooms, drained
  • 2 (7 1/2 oz.) crab meat or 1 lb. fresh white crab meat

Method

  • Melt butter in saucepan.
  • Blend in flour, salt, pepper, parsley and chives.
  • Slowly stir in milk and cook until sauce thickens.
  • Add lemon peel and juice.
  • Fold in mushrooms and crab meat.
  • Spoon into individual scallop shells or casserole dish. Sprinkle top with 1/2 cup grated Cheddar cheese and 1/2 cup buttered bread crumbs.
  • Bake at 350° for 10 to 15 minutes.
