Ingredients
- 1/4 c. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- dash of pepper
- 1 Tbsp. minced parsley
- 1 Tbsp. chopped chives or green onion tops
- 1 c. milk
- 1 tsp. grated lemon peel
- 2 Tbsp. fresh lemon juice
- 1 (3 to 4 oz.) sliced mushrooms, drained
- 2 (7 1/2 oz.) crab meat or 1 lb. fresh white crab meat
Method
- Melt butter in saucepan.
- Blend in flour, salt, pepper, parsley and chives.
- Slowly stir in milk and cook until sauce thickens.
- Add lemon peel and juice.
- Fold in mushrooms and crab meat.
- Spoon into individual scallop shells or casserole dish. Sprinkle top with 1/2 cup grated Cheddar cheese and 1/2 cup buttered bread crumbs.
- Bake at 350° for 10 to 15 minutes.
