Ingredients

  • 1c whole wheat cous cous
  • 1/4 t salt
  • 1/4 t pepper
  • 1/8 t cinnamon
  • 3 T extra virgin olive oil
  • 3 T lemon juice
  • 1 & 1/2 t minced garlic
  • dash sugar
  • 1/4 t salt
  • 1/4 t pepper
  • 1/3 c chopped mint
  • 1/4 c sliced scallions
  • 1/8 t smoked paprika
  • 15 oz can chickpeas
  • 1 chopped tomato
  • 3/4 c crumbled feta cheese

Method

  • Place cous cous in a bowl with 1/4 t salt, 1/4 t pepper and 1/8 t cinnamon. Stir in 1 cup boiling water and cover for 10 minutes. Uncover and fluff with fork.
  • In a separate container, combine olive oil, lemon juice, minced garlic, and sugar. Add to cous cous.
  • Then add 1/4 t each salt and pepper, mint, scallions, paprika, chickpeas, tomato and feta.
