- 1c whole wheat cous cous
- 1/4 t salt
- 1/4 t pepper
- 1/8 t cinnamon
- 3 T extra virgin olive oil
- 3 T lemon juice
- 1 & 1/2 t minced garlic
- dash sugar
- 1/4 t salt
- 1/4 t pepper
- 1/3 c chopped mint
- 1/4 c sliced scallions
- 1/8 t smoked paprika
- 15 oz can chickpeas
- 1 chopped tomato
- 3/4 c crumbled feta cheese
Method
- Place cous cous in a bowl with 1/4 t salt, 1/4 t pepper and 1/8 t cinnamon. Stir in 1 cup boiling water and cover for 10 minutes. Uncover and fluff with fork.
- In a separate container, combine olive oil, lemon juice, minced garlic, and sugar. Add to cous cous.
- Then add 1/4 t each salt and pepper, mint, scallions, paprika, chickpeas, tomato and feta.
