Ingredients

  • 4 or 5 small zucchini
  • 3 medium onions
  • 5 strips bacon
  • Parmesan cheese
  • salt and pepper

Method

  • Prepare in a skillet (and serve in it too).
  • Fry bacon crisp; remove, drain and set aside.
  • Drain some of the bacon fat from pan. Slice onions into skillet; partially fry.
  • Slice zucchini and add to skillet.
  • Mix onions and zucchini; season with salt and pepper. Cover and cook (medium to low heat); stir occasionally.
  • Cook until zucchini is tender, but not limp.
  • Crumble bacon over the top. Sprinkle with Parmesan cheese.
  • Serve with a smile.
