Ingredients
- 4 or 5 small zucchini
- 3 medium onions
- 5 strips bacon
- Parmesan cheese
- salt and pepper
Method
- Prepare in a skillet (and serve in it too).
- Fry bacon crisp; remove, drain and set aside.
- Drain some of the bacon fat from pan. Slice onions into skillet; partially fry.
- Slice zucchini and add to skillet.
- Mix onions and zucchini; season with salt and pepper. Cover and cook (medium to low heat); stir occasionally.
- Cook until zucchini is tender, but not limp.
- Crumble bacon over the top. Sprinkle with Parmesan cheese.
- Serve with a smile.
