Ingredients

  • 10 oz. frozen spinach, chopped and thawed)
  • 1 c. low-fat cottage cheese
  • 1/4 tsp. nutmeg
  • 2 egg whites, stiffly beaten
  • 1/4 c. diced Mozzarella cheese
  • 2 Tbsp. grated Parmesan cheese

Method

  • Combine spinach, cottage cheese and nutmeg.
  • Fold stiffly beaten egg whites through the spinach mixture.
  • Pour into a nonstick baking dish or use pie plate sprayed with Pam.
  • Top with diced Mozzarella cheese.
  • Sprinkle with Parmesan cheese.
  • Bake at 350° for 20 to 25 minutes (until firm).
