Ingredients
- 10 oz. frozen spinach, chopped and thawed)
- 1 c. low-fat cottage cheese
- 1/4 tsp. nutmeg
- 2 egg whites, stiffly beaten
- 1/4 c. diced Mozzarella cheese
- 2 Tbsp. grated Parmesan cheese
Method
- Combine spinach, cottage cheese and nutmeg.
- Fold stiffly beaten egg whites through the spinach mixture.
- Pour into a nonstick baking dish or use pie plate sprayed with Pam.
- Top with diced Mozzarella cheese.
- Sprinkle with Parmesan cheese.
- Bake at 350° for 20 to 25 minutes (until firm).
