Ingredients

  • 2 Cornish Hens
  • 6 mini sweet peppers
  • 2 celery stalks
  • 1/2 cup cubed butternut squash
  • 1 Red onion
  • 1 tbsp lemon pepper
  • 1 tsp salt
  • tbsp dried basil
  • 1 olive oil

Method

  • Preheat your oven to 375
  • Clean the outside and clean out the cavity of the cornish hen
  • Cut up vegetables
  • Mix seasoning together
  • Rub the cornish hens down with olive oil and seasoning
  • Stuff the cavity of the hens with vegetables
  • Cook for 1 hour and 15 min you can turn on broiler when the hour and 15 minutes is up to make skin crispy
