Ingredients

  • 1 c. fresh ground cornmeal
  • 1 c. flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 1 egg
  • 1 c. milk
  • 3 Tbsp. bacon grease

Method

  • In
  • a medium bowl, combine cornmeal, flour, sugar, salt and baking powder.
  • Make a well in center; add egg and beat as you gradually
  • add milk.
  • Heat a large cast-iron skillet with the bacon
  • grease until grease is hot.
  • Stir cornmeal mixture good and
  • pour in skillet and bake in preheated 400° oven for 20
  • to 25 minutes.
  • Invert cornbread onto serving plate.
  • Cut in pie-shape slices and serve.
