Ingredients
- 1 c. fresh ground cornmeal
- 1 c. flour
- 1 Tbsp. sugar
- 1 tsp. salt
- 4 tsp. baking powder
- 1 egg
- 1 c. milk
- 3 Tbsp. bacon grease
Method
- In
- a medium bowl, combine cornmeal, flour, sugar, salt and baking powder.
- Make a well in center; add egg and beat as you gradually
- add milk.
- Heat a large cast-iron skillet with the bacon
- grease until grease is hot.
- Stir cornmeal mixture good and
- pour in skillet and bake in preheated 400° oven for 20
- to 25 minutes.
- Invert cornbread onto serving plate.
- Cut in pie-shape slices and serve.
