Ingredients
- 1 medium onion, diced
- 1 lb. lean ground beef
- 1 can tomato sauce
- 2 cans mixed vegetables (frozen or canned)
- 1 Jiffy cornbread mix
Method
- Brown ground beef.
- Cook onion until tender.
- Drain off excess fat.
- Add tomato sauce and vegetables to meat mixture and cook for a few minutes.
- Mix cornbread according to package directions. Place meat and vegetables in casserole dish.
- Spread cornbread on top and bake at 375° until cornbread is done.
