Ingredients

  • 1-16 oz. frozen corn thawed
  • 1-15 oz. can black beans (rinsed and drained)
  • 1-Small can sliced black olives (drained)
  • 2-Medium red peppers -diced
  • 2-Medium green peppers-diced
  • 4-Large tomatoes-diced
  • 1-Medium red onion-diced
  • 1-Medium sweet onion-diced
  • 5-cloves minced garlic
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 cup apple cider vinegar
  • 1/2 cup chopped cilantro
  • 1-tbsp. oregano
  • 1-tsp. salt
  • 1-tsp. pepper
  • 1 small jalapeno pepper-diced
  • Optional -4 avocados-diced ( add just before serving)

Method

  • Combine all ingredients in a large bowl, mix thoroughly and refrigerate over night.
