- 1-16 oz. frozen corn thawed
- 1-15 oz. can black beans (rinsed and drained)
- 1-Small can sliced black olives (drained)
- 2-Medium red peppers -diced
- 2-Medium green peppers-diced
- 4-Large tomatoes-diced
- 1-Medium red onion-diced
- 1-Medium sweet onion-diced
- 5-cloves minced garlic
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1/2 cup apple cider vinegar
- 1/2 cup chopped cilantro
- 1-tbsp. oregano
- 1-tsp. salt
- 1-tsp. pepper
- 1 small jalapeno pepper-diced
- Optional -4 avocados-diced ( add just before serving)
Method
- Combine all ingredients in a large bowl, mix thoroughly and refrigerate over night.
